If you’re looking for a healthy and delicious appetizer to serve at your next gathering, roasted garlic veggie dip might just be the perfect solution! This dip combination of pickle juice, caramelized oven roasted garlic, savory herbs and spices, creamy mayonnaise, and sour cream creates a unique flavor that’s sure to please.
To make the veggie dip, you’ll need a variety of vegetables such as cucumbers, carrots, broccoli, cherry tomatoes and celery. You can either make your own roasted garlic (~35 minutes) or if you’re short on time, buy a jar of minced garlic and sear it in olive oil for 2-3 minutes. To make the roasted garlic fresh, cut off the top quarter of the bulb and peel the excess outer layers away. I normally put it in a muffin tray, drizzle with olive oil and cover with foil. Roast for 35 minutes at 400F. Next, you’ll need to use a blender or food processer to mix all ingredients listed in the recipe below. Add in extra dill and pickle juice to really elevate the flavor and you’re all set!
One of the great things about pickled veggie dip is that it’s incredibly versatile. You can serve it with a variety of dippers, such as pita chips, sliced veggies, or crackers.
